Chocolate Vanilla Marble Swirl Cake!

This cake is very rich, but not overwhelmingly sweet. It makes a good snack in the afternoon with a hot drink. It looks gorgeous when you cut it open, too! It’s much better than the store bought version, in my opinion.

Ingredients:
1. 1 cup of butter (2 sticks) at room temperature
2. 2 cups of sugar
3. 3.5 cups of all-purpose flour
4. 2 tsp of vanilla
5. 2 tsp salt
6. 1 ½ tsp baking powder
7. 4 eggs
8. ¼ cup cocoa powder
Method:
Mix the butter and sugar together- you can use an electric mixer, but it isn’t completely necessary. Use a large bowl. Sift and add the flour to this mixture next.
Add the vanilla, salt, and baking powder next. The batter will likely appear crumbly at this point. Mix them as thoroughly as possible.
Lastly, add the 4 eggs, one at a time and mixing for about 2 minutes in between. The resultant batter will be light and fluffy.
Take 2.5 cups of the batter and separate it in the bowl- then add the cocoa powder. If the resulting mixture is grainy, I suggest adding a tablespoon of oil. Any oil except olive or mustard should be fine.
Preheat the oven to 350F. Prepare a 9x9 greased tray of at least 2.5-inch depth (I used a glass one, but a foil tray may work better). Then, place scoops of batter in an alternating vanilla-chocolate pattern, like a chessboard. Drag the knife through it in an S shape to create the marbled texture, and then shake the tray to make it even. Do the same with alternating batters on top until all of the batter has been used up.
Place in the oven for an hour and let cool for 20 minutes at least. Tastes really great warm or room temperature, and best enjoyed alongside tea or coffee!
