Besan Chilla Sandwich


Ready In: 15-20 min


Cuisine: Indian, Suitable for Vegetarians and Vegans Makes: 2-3 Sandwiches



Ingredients:

· Bread

· Oil/ butter

· For the Batter:

o Water (add as per consistency)

o Chopped Onions (2 tablespoon)

o Chopped Carrots (2 tablespoon)

o Chopped bell peppers (2 tablespoon)

o Chopped Green Chilies (1 chili)

o Besan/ Gram flour (1 cup)

o Salt (as per your taste preferences)

o Turmeric (1 or 2 pinches)

o Red Chili Powder (0.5 teaspoon)

o Sesame Seeds (optional but recommended- 1 teaspoon)

o Cumin seeds(optional but recommended- 1 teaspoon)

· For the spreading/ dipping sauce

o Coriander (1/2 cup)

o Mint leaves (1/4 cup)

o Green Chillies- depending on your spice tolerance

o Ginger (a small piece)

o Juice of half a Lemon

o Salt (as per your taste preferences)

· Optional

o Other sauces

o Lettuce/ Cabbage

o Cheese Slice


Preparation:

1. Mix all the batter ingredients to make a thick paste like consistency.

2. For the sauce, blend in the leaves with the chilli and ginger to make a paste. Once it is all combined well, you can add the salt and lemon juice.

3. On a hot pan, pour the batter to make a medium sized pancake/ omelet. Add a little oil/ butter on top and sides so it’s cooked well. Cook on both sides on medium to high flame until seems cooked (probably 1-2 minutes on both sides)

4. Once the pancake is done, toast two slices of bread, and top it with the sauce we made. You can also use other sauces if you like- ketchup, mustard sauce, chilli sauce, etc.


5. Then place the pancake (you can cut the pancake into pieces for it to fit) on the bread, and top it with the second bread slice. If you want, you can also add the lettuce (or cabbage) leaves and/ or a cheese slice between the bread.

6. Enjoy warm for any meal of the day.


Tips & Suggestions:

· I prefer this dish hot and spicy, but you can make alterations as you like. Maybe add a cheese slice or skip the green chilies.

· You don’t always have to use onions, bell peppers and carrots. You can either add chopped cabbage or skip out on one of the veggies. It’s flexible- you can choose to have just one or more veggies.

· Some people also like just the pancake, with either ketchup or the sauce we made. You can try that too if you like.

· Some people also like more toppings in the sandwich, apart from just the cabbage/ lettuce or cheese. You can also experiment around with that. Some options include sliced onions, sliced bell peppers, sliced tomatoes, cottage cheese, etc.
