Crispy Tiropita

Hello Aspiring Chef, Homemade pita is the best pita! It’s simple and fun to make and tastes absolutely amazing! Ditch the pre-packaged pita from the grocery store, now you can make it yourself. It only requires 4 ingredients!



Tiropita/Feta Cheese Pita


Ready In: 1 hour Serves: 32 Cuisine: Greek




Ingredients: (Approximately $15.00 CAD)

· 1 package of phyllo/fillo pastry sheets (found in the frozen section of the grocery store)

· 3 cups of feta cheese

· 2 eggs

· ¼ cup of olive oil (for basting)

Preparation:

1. Preheat oven to 375 degrees. Line a baking pan with parchment paper/silicone baking sheet or oil the sheet if you do not have parchment paper.

2. Unroll phyllo pastry sheets and cut in half to double the amount of sheets. Pile the halves on top of each other.

3. In a bowl, crumble the 3 cups of feta. Then crack the eggs into the feta. With a fork, mush the egg and feta together. Put aside

4. In a small bowl, pour roughly ¼ cup of olive oil, or pour as needed.

5. Time to start assembling the pita!

a. To make pita swirls: Spread a a strip of oil along the bottom of a phyllo sheet (about an inch thick). Next crumble some of the feta mixture along this strip of oil. Now grab the bottom edge of the phyllo sheet and roll it over the feta. Keep rolling the sheet until the entire sheet is rolled. Now curl the strip into a swirl. Think of “cinnamon bun shape”.

b. To make pita triangles: Fold the height of the phyllo sheet over twice. Think of a “trifold pamphlet” action”. Now spread oil along the strip. Take a small scoop, roughly 1 tbsp, of the feta mixture and place it in the left corner of the strip. Now grab the top left corner and cross it over the feta folding it to line up with the bottom of the strip. This fold should make a triangle shape. Now take the bottom left corner and fold it over the right. Continue this motion of folding the triangle until the strip is folded into one triangle.

6. Repeat the steps until no phyllo sheets are left. Place finished swirls and triangles onto the baking sheet. Baste the tops of the swirls/triangles with oil. Put in the oven to cook for 20 minutes or until crispy.

7. Let cool 10 minutes…dig in!


Tips & Suggestions:

· You can add anything you want to the feta mixture. Popular variants include adding spinach or leeks.

· Get some music going and have fun! Making pita is a great break from school and work.

· The crispier, the better.
